Gazpacho (Super Summer Garden Soup)

Makes 8 servings (about 1 cup each)

Ingredients
3 large red tomatoes, chopped (about 3 cups)
1 large cucumber, peeled and chopped
1 each large red and green bell pepper, chopped
1 large white onion, chopped
1 large jalapeno pepper, seeded and minced
1 to 3 garlic cloves, chopped*
1 jar (1 lb. 10 oz.) Ragu Old World Style Sweet Tomato Basil Pasta Sauce
1/3 cup finely chopped fresh basil
3 tablespoons finely chopped fresh Italian flat leaf parsley
2 to 3 tablespoons finely chopped cilantro*
1 ½ tablespoons olive oil
3 tablespoons lime juice
¼ cup red wine vinegar
½ to1 cup water (optional, depending on thickness desired)
Dash ground black pepper (optional)
Dash hot red pepper sauce (optional)
Salt to taste (optional)

Directions

  1. Combine all ingredients in large bowl or container.
  2. Add at least one-half the mixture to a food processor bowl and blend until nearly smooth.
  3. Combine pureed soup with original mixture.
  4. Cover and chill at least 1 hour before serving.

*Add amount based on your personal preferences.

This soup is an excellent source of Vitamin A and Vitamin C and many phytonutrients.
